I'm making a beer cheddar soup sometime this week. I would like a recommendation for a beer that would pair well with cheddar. I've been looking for suggestions online and all I've found are rants from hardcore beer fanatics regarding the intricacies of beer brewing. I'm also making sourdough croûtons to go with this. I would like a beer that enhances these flavors so that optimum taste is achieved. If you could recommend a good vegetable to go with this beer, I would appreciate that as well seeing that I am not particularly fond of straight-cheddar soups.
